Cornbread

Masa Harina Cornbread: 3 cups masa, 5 cups regular flour, 2 sticks of butter, 2 tsp salt, 2 cups sugar (or 1.2 cups sugar 0.5 cup honey), 4 eggs, 2 tbsp baking powder.

Ingredients:

  • 3 cups masa harina or cornmeal
  • 5 cups white flour
  • 2 sticks of unsalted butter plus 2 tsp vegetable oil
  • 4 eggs
  • 2 cups sugar or, 1.5 cup sugar + 0.5 cup honey
  • 2 tsp salt
  • 2 tbsp baking powder

Directions

  1. mix all ingredients (in room temperature preferred) in large bowl or bread mixer
  2. pour mixtures into two 9×13 inch baking pans lined with parchment paper
  3. bake at 350f uncovered for 45 minutes.

Note

Masa harina corn flour gives a finer, nutty, more intense flavor than cornmeal.
