Soft-Dough Pizza / Focaccia

Jalapeno Cheese Bread: bake at 375 Fahrenheit for 25 minutes. Switch rack top and bottom racks at half time.

Ingredients:

  • 8 cups of flour
  • 5 tsp salt (or 6 tsp of garlic salt = 2 tbsp garlic salt)
  • 2 tbsp dried yeast
  • 1-2 tbsp sugar
  • 6-8 tbsp extra virgin olive oil (save some to grease your hands) 
  • About 4 cups of water, always at least half the amount of flour for high hydration dough

Steps

  1. Before getting your hands greasy, put all the ingredient and topping on the near vicinity. Line 4 18×13 inch trays with parchment paper. 
  2. Make the dough and divide it into 8 equal balls. It’s easier to compare the volume in ball shape using eyes and hands. 
  3. Use greasy hands to spread two balls of dough onto each tray. 
  4. Wash hands and enjoy layer the toppings. 
  5. Bake two trays together at 375 degrees for 30 minutes. Swap top and bottoms trays at about 15 minute mark to help crust develop more evenly.
